Cold Sesame Garlic Noodles with Broccoli and Peanut Butter
Sounds kinda gross when you put “peanut butter” at the end. . . I have always loved cold savory spicy sweet fatty carby food… This is perhaps the perfect match for my pallet.
Combine:
3-4 cloves of fresh pressed or crushed garlic: It has to be fresh, yo.
4 tablespoons of sesame oil Pure toasted sesame oil is best. I’ve used blended sesame oil, which is acceptable, but lacking.
4 tablespoons of seasoned rice vinegar Black vinegar is also excellent for this
4 tablespoons of peanut butter: Natural is best, its your choice if you want to go crunchy or smooth.
1 tablespoon of honey Honey is not technically vegan, but it is less damaging to the planet, causes less animal suffering and death, and is more nutritious than sugar, so it gets a pass from me. You could certainly use blue agave nectar.
5 tablespoons of soy sauce I use low sodium.
Optionally add:
1 teaspoon of ground ginger (less if you have fresh ginger)
1-3 tablespoons of your favorite hot sauce I use about 2 tblsp’s of Sriracha
A shredded carrot or two
Steam:
1 bunch or a couple crowns of brocolli Look, I don't know how much you like broccolli, I always want more in this dish.
Cook:
One 16 ounce package of spaghetti (I use whole wheat)
Then. . .
Drain the spaghetti, and immediately mix it with the sauce, add in the broccoli. Garnish with some sesame seeds if you have em, and stick it in the fridge until cold.
